Molino y Lagares is centred in the indigenous grape variety of the Bullas area, the Monastrell. The winery owns two properties with this variety. That located just in front of the winery has vines aged 30 years old and the other one has some other that are 40 years old is located in a near area which is called Pasico Malo. As a complement, there is a little of the Syrah variety, used with the Monastrell one for one of the wine lines.
Soils are componed by clay, slime, gravel and pebbles. In spite of their organic poorness, they are deep and permeable. Climate is Mediterranean with continental influences as the mountains surround the vineyards. Altitude is over 800 metres above sea level, winters are cold, rainfall is scarce and summers are hot but with cool nights. All this favourishes the natural rythm of development and ripening of the grapes. Under these conditions is easy the practice of an organic viticulture which allows to exploit the land only making the basic contributions, exploit as much as possible the vine's qualities to get a balance and a complexity in the grapes.
Harvest is made by hand and collected in small boxes, seeking always the right moment of ripeness.
